Nice choices, but I have some more:

1. Mia Kirschner in Dracula: The Series. In a 2-episode story arc she succumbs wonderfully to the dark side with fangs.

2. Colleen Fitzpatrick (aka “Vitamin C”) in Dracula 2000 plays into Dracula’s hands until she’s a full-fledged lesbian vampire and tries to bite her best friend.
